La VIE – a French restaurant on the 11th floor of VIE hotel is not only known for its delightful menu worthy of “The Plate” awarded by Michelin Guide 2018, but also for its hosting “Michelin Star Chef Events” ,bringing chefs from Michelin-starred restaurants around the world to showcase their specialties here in the heart of Bangkok. On 25th-28th April 2018, Chef Sébastian Sanjou, the chef-owner of a 1-Michelin Starred Le Relais des Moines restaurant visits La VIE... His 4-course Set Lunch began with an Amuse Bouche that shows various ways of approaching a Champignon. Crushed and mixed with herbs at the bottom, mussels in the middle, and a whole juicy slice of a Champignon on top, poured over by a thick mushroom soup upon serving. Giving a depth and intensity to what would otherwise be an ordinary mushroom soup…Lovely! The starter is the top-quality, silky, melt-in-the-mouth foie gras served with bitter orange sauce and crispy young turnip. How delightful! There are 2 choices for the main dish - Wild Seabass or French Pigeon. Knowing that one of Chef Sébastian Sanjou’s specialties is half-wild duckling Pierre Duplantier, I picked the French Pigeon thinking it to be his improvisation of the same dish. The pigeon meat was soft, the skin a bit crispy..perfect! The Marsala sauce was super delicious…and matched well with the accompanying puree of beets. I was told that the chef brought his own ingredients from France for this dish, and obviously it was a star of the meal. The dessert – Chocolate Dome – is another of chef’s specialties. Underneath the dome is white chocolate mousse, crumble, fresh raspberry, and chocolate sorbet. Warm chocolate sauce is poured on the dome upon serving. Lip-smacking good! The net price of this event is 3,000 THB for a 4-course Set Lunch, and 6,000 THB for a 6-course Set Dinner.
