🇯🇵Saku, Nagano, Japan🇯🇵 Soba ｘ innovative. It's located in the incredible countryside at Nagano prefecture. How can we find out? I have no idea... It becomes famous by word of mouth. They use Gensoba(wheat berries) 100% which comes from this village and use Ishiusubiki(stone ground) to make Soba. Their amazing point is "they are not only Soba place but also meeting fusion foods!". The chef is familiar with Italian and French.(He used to work at famous restaurants) So that you can find out innovative plates like a risotto inspired by Soba. And also he focuses on ingredients which they can get around this village.(Perfect environment with great mountains, clear water and nutrient rich soil.) There is nothing around. Only local japanese houses and perfect environment😍
